– 1 cup unsalted butter , at room temperature
– ½ cup granulated sugar
– 1 cup brown sugar , light or dark
– 2 teaspoons vanilla extract
– 15 oz. pure pumpkin puree (NOT pumpkin pie filling)
– 2 ½ cups all-purpose flour
– ½ teaspoon salt
– 2 teaspoons ground cinnamon
– ½ teaspoon ground ginger
– ½ teaspoon ground allspice
– ¼ teaspoon ground nutmeg
– 1 cup pecan pieces
– 1 cup butterscotch chips
– 1 cup white chocolate chips
Preheat the oven to 350°F and grease a 9x13 baking dish with cooking spray. Using a hand mixer or stand mixer with paddle attachment, beat the butter and sugars in a large bowl. Add the egg and vanilla, then the pumpkin. In a separate bowl, whisk the dry ingredients (flour, salt and spices). Add to the pumpkin mixture.
