– 1 lb baby carrots , sliced in half lengthwise
– 2 tablespoons honey mustard
– 2 tablespoons unsalted butter , melted
– 1 teaspoon chili powder (optional, more or less to taste)
– salt and pepper , to taste
Combine all ingredients in a bowl. Toss to evenly coat. Spread in single layer on prepared baking sheet.
Bake in preheated 425°F oven for 20 to 25 minutes, until desired doneness.
