GINGERBREAD MUFFINS

Ingredients:

– 3 cups all-purpose flour – 2 teaspoons baking soda – 1 teaspoon salt – 1 teaspoon ground cinnamon – 1 teaspoon ground cloves – 1 teaspoon ground ginger – 1 cup unsulphured molasses – ⅔ cup vegetable oil , or canola oil – ½ cup granulated sugar , plus additional for dusting – 2 large eggs – 1 teaspoon vanilla extract – 1 cup boiling water

GENERAL STEPS

Combine dry ingredients in medium bowl. Beat wet ingredients (minus water) in large bowl. Add dry ingredients to wet ingredients. Stir in boiling water. Divide into muffin cups.
