– ½ cup unsalted butter
– 1 cup yellow cornmeal
– 1 cup all-purpose flour
– 2 Tablespoons sugar
– 2 teaspoons baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 1 ½ cups buttermilk
– 1 large egg
Place stick of butter into 10-inch oven-proof skillet and place in the oven. Preheat oven with skillet in it to 425°F. Whisk the cornmeal, flour, sugar, baking powder, baking soda and salt in a large mixing bowl. Lightly beat the egg into the buttermilk. Pour into the dry ingredients and stir to combine.
