I like this dish because it's fast and easy, and you can experiment with different varieties. It's also healthy! This recipe uses only one acorn squash so only serves two.
Preheat oven to 350. Take one acorn squash, halve it and seed it. Place it cut side up in a microwave-safe baking dish and cover loosely with plastic wrap. Microwave on high for 10-15 minutes or until fork-tender. Meanwhile, prepare your desired filling. I usually fill with a flavored rice with diced chicken and cheese to top. Once the acorn squash is done in the microwave, fill it with the rice, top with shredded cheese and bake in a 350 degree oven for 5-7 minutes or until cheese is melted.
