Happy Saturday!! Did y'all have a nice Easter celebration last weekend? I'm definitely not great at keeping up with Saturday Seeds, but read on to see what we've been up to since the last update!

AOTA Conference
Many of you know that not only do I run this business of food/travel writing, blogging, photographing, but I am also an Occupational Therapy Practitioner. A couple weekends ago the national AOTA conference was held only 3 hours away in New Orleans, so my coworkers and I met up for one day at the conference.
We sat in sessions alllllll day in order to gain as many continuing education credits we could! Because, man, the conference is EXPENSIVE so we were making sure to get our money's worth! 🙂 Kelli and I drove down at 4AM and we came home at 8PM. It was a long day, yet it didn't feel that long! The drive was fun since I had a friend to talk to!
Simon Turned SIX!
Our little Simon-goose is SIX! I cannot believe it's been six years, then again, sometimes I think he should be a teenager by now. HA! We celebrated for like three days straight. Of course, we started with our favorite Birthday Cake Pancakes!
His birthday was on a Wednesday, so I took a cookie cake to his school and then checked him out of school and took him to Newk's for his free birthday lunch! We then picked up cupcakes at Sam's Club to share with the neighbors that evening. For dinner, we celebrated at Chick-fil-a where he opened his presents. In the middle of all of this, we also had our elementary school's Color Run fundraiser event.

The Color Run was scheduled for Thursday, but because the weather forecast called for strong storms, it was moved up to Wednesday (Simon's birthday). We were SO busy the entire day fitting it all in. We even skipped a make up baseball game for Judah in order to make it all happen.
The Color Run is always so fun. This was our third year to participate (and the third year since it started). It's really the perfect fundraising event for the school. The first year we got a new playground from it!
Easter Weekend
For Easter, we drove the 10-12 hours to North Carolina to spend the weekend with Ben's side of the family. We had a blast with the cousins hanging out. The kids even jumped in the freezing pool on our last day, because they are CRAZY! 🙂 They had SO much fun "swimming" and playing baseball, bowling, egg hunting, video gaming, etc. Cousins are the best friends!
This year, the Easter bunny brought Simon and Judah these football sequin pillows. I couldn't be more happy with them!! The quality is great and the boys absolutely love rubbing the sequins back and forth to draw whatever they want and to uncover their name/football graphic.
