Happy Saturday! As you are reading this, we are on our way driving to the "happiest place on Earth!" -- DISNEY WORLD! And even though it's not Saturday as I'm typing this, the week is already almost over and I have some thoughts to share.
I didn't have time to add any photos to this post, except for this one of Judah being silly at Simon's Friday night basketball game. Doesn't he look like a teenager!?? WAAHHHH!!!!!

Chicago Bears vs Philadelphia Eagles
Sunday, we had friends over to watch the Bears playoff game. What a heart-breaker! Did you watch it? We lost by missing the field goal at the end. There are many mixed feelings about the kicker. At first I felt bad for him, but when I learned he had already missed at least 10 other field goals this season I wondered why he was even allowed to play the playoff game!?
At least it was an entertaining game and we have a lot to look forward to next year with our Chicago Bears! Mitchell Trubisky will have more confidence and hopefully we'll have a different kicker. All in all, it was finally a great year to be a Bears fan after the last many years of not even making the playoffs.
Who is your NFL team? College football is big down here -- SEC. How about that Clemson vs Alabama game? WOW!
Back to School -- Finally?
Monday, the kids went back to school after being off for 2 full weeks for Christmas break. The boys definitely needed some time apart, so it was great timing. We had fun during our break -- didn't have the stress of traveling OR hosting for any of the holidays. So, we were able to just fully enjoy our time together by playing board games, card games, video games, touring Christmas lights, staying in pajamas, sleeping in, baking cookies, and the list goes on. They didn't want to get back to school, but next week they're already off again for our Disney trip. Lucky ducks!
Busy at the Clinic
My co-worker at the clinic had her baby early, so she is now on maternity leave and I am taking on more hours to cover her patients. So, finding time to pack for our trip was hard! The boys are playing Upward basketball and Ben has been super dad taking over in the afternoons while I'm at the clinic to get their homework done before off to practice.

How to Seed a Pomegranate - Pomegranates are a healthy source of antioxidants, fiber and other vitamins...perfect for ringing in the new year. But, many are intimidated by this fruit. I originally published this "how-to" a few years ago and decided it needed a little updating with new tricks I've learned over the years.
Avocado Tuna Patties - We love these tuna patties, especially for a healthy lunch over a bed of greens. They require only a few ingredients and turn out for a crispy tuna cake!

Chicago-Style Deep Dish Pizza - Since we were having friends for the Chicago Bears football game, I made us two deep dish pizzas for a Chicago theme. Although we didn't get the win, we did celebrate eating such delicious deep dish!
Salted Caramel Dip - Along with the pizza on Sunday, I made this Salted Caramel Dip that served well as an appetizer and dessert all in one. This time I only served pretzels with it, but for Christmas Eve we also had sliced apples to dip. It's a very quick dip and everyone always loves it!
My Favorite Shredded Chicken - Once a month I like to boil and shred chicken to keep in the freezer. I have so many convenient meals that call for shredded chicken so having it ready to go makes those recipes that much easier!
The week after next I'll share photos of our Disney trip! This week, I posted tips for visiting Magic Kingdom in just ONE day, but next week we get FIVE days at the parks!
