These were served to us at the DOLE® Summit last month, and I wanted to share the recipe with you because I loved it so much. Simple and quick, using pineapple juice and apricot nectar. Make it a non-alchoholic drink by using sparkling cider instead of the wine. It's the perfect, refreshing drink for brunch!

Pineapple Apricot Bellini
Pineapple juice mixed with apricot nectar and sparkling wine. Use sparkling cider for a nonalcoholic version!
Servings: 4 servings
Ingredients
- 1 cup sparkling white wine or sparkling cider
- ½ cup DOLE® Pineapple Juice
- ½ cup apricot nectar
Instructions
- Stir all of the ingredients in a large pitcher. Pour into champagne flutes and serve.
