Guinness and Onion Soup with Irish Cheddar Crouton - Ben was just telling me again yesterday how much he loved this soup. Each time he prefaces it with "I'm not a big onion fan, but..."
Chicken and Mushroom Boxty - Dug out from the archives and re-posted with a new photo (although still an ugly one). 🙂 I enjoy the chicken and mushroom filling with the potato cake and will continue to keep this as a St. Patty's tradition for us.
Cheddar, Ham and Chive Waffles - A uniquely savory choice for a quick breakfast or dinner.

Let's dig into the archives and reconsider some of the older recipes on Pennies on a Platter that we ate this week. (Some of which I plan to re-post with new photos and better directions in the near future.)
Oatmeal Chocolate Chip Cookies - I baked up half the batch for myself and Ben, then froze the rest of the dough for later use.
Creamy Chicken Pockets - We had these for lunch on Sunday, then froze the remainder pockets.
Caught My Eye
I love reading other blogs and websites, and often bookmark their recipes, products or reviews. These are a few that top my list from the week.
Creamy Quinoa Primavera - I have a bunch of Quinoa on hand that I haven't even tried to use yet. Hopefully I'll finally jump on the Quinoa bandwagon and try this recipe next week, along with another one I've had bookmarked for quite a while now.

Remember how a few months ago we helped a friend (Vee) in need, who lost her husband and was left with three young children? You worked with me and helped raise a large chunk of change to donate to this family just by clicking on my website. You.were.amazing. Now, Vee's home church in Michigan is rallying up the community to help raise funds to buy a new vehicle for her. Her current car is reaching 200,000 miles and becoming quite unreliable. She travels often for singing commitments and to visit family, so a better vehicle to tote around three kids is quite needed.
