A few tips for making these Peanut Butter Cup Blondies:
- Refrigerate or quickly freeze the peanut butter cups before chopping them. This will help them from melting and making a mess while chopping.
- Line your pan with foil and lightly grease with nonstick spray. This creates very easy clean up.
- Save some of your chopped peanut butter cups to sprinkle over top the batter before baking.
- Bake until the bars are set in the middle. These are gooey bars, but if you want them less gooey you can bake a little longer -- just watch the sides from too much browning!
How to Make Peanut Butter Cup Blondies
INGREDIENTS:
- 1 cup brown sugar
- 6 tablespoons butter
- ⅓ cup peanut butter
- 1 egg
- 1 teaspoon vanilla
- 1 cup flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup chopped peanut butter cups
DIRECTIONS:
- Preheat oven to 350°F. Line 8x8-inch pan with foil and lightly spray.
- Mix together sugar, butter and peanut butter. Add egg and vanilla. Beat for 2 minutes.
- Whisk together flour, baking powder and salt. Mix into wet batter and fold in peanut butter cups.
- Spread batter evenly into pan.
- Bake 25 minutes or until set in middle.

Peanut Butter Cup Blondies
Ingredients
- 1 cup brown sugar
- 6 tablespoons unsalted butter at room temperature
- ⅓ cup peanut butter creamy or crunchy
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup chopped peanut butter cups
Instructions
- Preheat oven to 350°F.
- Line bottom and sides of 8x8-inch pan with foil. Lightly grease with nonstick spray; set aside.
- In a large mixing bowl, beat the brown sugar, butter and peanut butter for one minute, until smooth. Add the egg and vanilla. Beat on high for 2 minutes.
- In a small bowl, whisk together the flour, baking powder and salt. Gently mix into the wet batter on low speed. Fold in ¾ cup of the chopped peanut butter cups.
- Pour the batter into the prepared pan and use a spatula to spread evenly. Sprinkle the rest of chopped peanut cups over top.
- Bake 25 minutes or until set in the middle. Remove from oven and cool before slicing and serving.
