In celebration of my 2-Year Blog Birthday, I gave away a Cuisinart Ice Cream maker to one of my lucky readers. Jessica was the winner! Jessica's favorite ice cream is Maggie's Moo's Better Batter, which I've had myself many times and also love. So, I experimented and came up with what I think is a good alternative, using boxed cake mix. To make it a little more fun, I used the Funfetti cake mix by Pillsbury. Even though there are already sprinkles mixed in this cake mix, they did not go through my sifter and into the mix. So, I added my own sprinkles that I had on hand during the last five minutes of the freezing process.
This ice cream was great! My only complaint is that it left a little bit of a film on the roof of my mouth, which is one of the reasons I do not like Mint Chocolate Chip ice cream. However, it was worth it for me to ignore the film because the taste was SO good!
Cake Batter Ice Cream
1 cup whole milk
½ cup sugar
2 cups heavy whipping cream
1 cup boxed cake mix, sifted
sprinkles, if desired
Mix the milk and sugar until the sugar is dissolved. Pour in the heavy whipping cream and cake mix. Whisk together until completely mixed in. Turn on ice cream maker and pour in mix. Let churn for 25 minutes. Pour in the sprinkles during the last five minutes of churning.
Transfer to a bowl and freeze.
