Happy Easter! Winter may be over, and Easter has passed, but we still have winter weather here in Chicago. Today was actually warmer (Ben and I were able to run outside) but the rest of the week will be cold again.
This winter I participated in a gift exchange with the What's Cooking group from The Nest. The theme was...you guessed it!... Winter! We were to send our secret WC person winter related food items, recipes, kitchen gear, etc. But, our limit was $25.My secret "elf" was awesome! She sent me two boxes from Sur La Table filled with the Barefoot Contessa's Homemade Marshmallow mix and Sinful Hot Chocolate mix. I finally got to test them out this weekend as we had a snow storm Friday (again) which makes it for perfect hot cocoa weather!
I made the marshmallows on Friday, but they had to set overnight, so we didn't get to eat them until Saturday. The box makes 48 squares, so we still have a bunch left over! They are sooooo good!We used them with the hot chocolate (which was also very very good) and had friends over to make s'mores. Of course, with the weather being so cold, we didn't use our fire pit for toasting the 'mallows. Instead, we used the microwave. Well... THEY used the microwave. I got a few tealight candles and toasted mine over the open fire. 🙂Worked like a charm!!These were so fun to make. Because of all the fun, I have a ton of pictures. I'll leave you with a series of photos during the "making of the marshmallows" process. I suggest you go and get yourself some of this! Those who have kids... it's a GREAT way to spend time in the kitchen with your young ones. Enjoy!
