Once in a while, our neighbors come over to watch a movie with us after they put their seven kids to bed. (Yes, you read that right, seven!) Sometimes they bring us chocolate milkshakes, other times I have a little snack for us to feast on. A few weeks ago, though, it was such a last minute decision that I wasn't sure what to serve for food. Even so, I let myself say "I'll make cookies!"
Problem: They were coming over in approximately 10 minutes.
Another problem: I was out of butter. WHAT!?
This was when a box of brownie mix came to my rescue. I couldn't make brownies, because they take like 45 minutes to bake, so I decided to try and turn the mix into cookie batter. Turns out, adding just a little bit of flour to the mix and some chocolate chips did the trick.

Chocolate Chip Brownie Mix Cookies
Ingredients
- Family sized box brownie mix
- ¼ cup vegetable oil
- 2 eggs , beaten
- ¼ cup to ½ cup flour
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone mat.
- In a mixing bowl, combine the brownie mix, oil, eggs and flour. Fold in the chocolate chips. Drop by tablespoons onto baking sheets. Bake for 10 minutes (if you like them gooey) or 12 minutes (if you like them cakey).
