SPLIT PEA SOUP

Warm up with a bowl of delicious split pea soup. This recipe is also perfect for celebrating St Patrick's Day! 

Ingredients:

– 1 tablespoon butter – 1 medium onion , chopped – 1 cup chopped celery – 9 cups water – 1 package (16 ounces) dried green split peas – 2 cups cubed peeled sweet potatoes or russet potatoes – 1 bay leaf – 1 ½ teaspoon salt – 1 teaspoon dried thyme – ½ teaspoon pepper

HOW TO MAKE SPLIT PEA SOUP

GENERAL STEPS

Melt the butter in a large pot over medium heat. Cook the celery and onion until tender, about 3 to 5 minutes. Stir in the remaining ingredients and bring to a boil. Reduce heat, cover and simmer for 70 to 80 minutes or until the peas are tender. Puree the soup until smooth, using an immersion blender. Or, wait for the soup to cool and puree in batches in a regular blender.

Serve and garnish with sour cream, yogurt, cheddar cheese, croutons or nutmeg.
