Black Eyed Peas Recipe

Hoppin' John

Hoppin' John is a Southern tradition for new years dinner  with black eyed peas and rice.  Made with a smoky ham hock or salt pork,  this black eyed pea soup is believed by some to bring good luck!

•Black eyed peas (in a can) •Ham and bacon •Chicken broth •Rice •Onion and peppers •Garlic and salt

Cook Bacon

Cook bacon in a large pot until crispy. Remove from pot but leave bacon grease.

Cook Veggies

Sauteé onions and peppers in bacon grease. Add garlic.

Boil

Add ham and broth. Bring to boil and simmer 15 minutes.

Simmer.

Stir in black eyed peas and rice. Simmer 10 more minutes.

Season and Serve

Chop up ham, stir in bacon. Season to taste and serve.
