Mixed Berries Buttermilk Cake

What You Need:

*unsalted butter *granulated sugar * large egg *pure vanilla extract *all-purpose flour *baking soda *baking powder *salt *buttermilk *DOLE® Frozen Wildly Nutritious Mixed Berries

Mix Wet

In a large mixing bowl, beat together the butter and 1/2 cup of sugar until light and fluffy, about 2 minutes. Beat in the egg, then the vanilla.

Mix Dry 

In a separate medium bowl, whisk together the flour, baking soda, baking powder and salt.

Assemble Ingredients

In a separate medium bowl, whisk together the flour, baking soda, baking powder and salt.

Pour into pan

Spread batter evenly into the greased cake pan. Open the bag of frozen fruit and evenly arrange over top the batter. Sprinkle with the remaining 1 Tablespoon of sugar.

Bake

Bake at 400 degrees for 30 minutes. Remove from the oven and let stand for 10 minutes before inverting onto a platter.

Serve & Enjoy! 

Serve warm with vanilla bean ice cream.
