As promised last week, I have this one last baby food recipe to share. Judah is a very good eater, and I'm so happy that I was able to make most of his baby food during these past few months. Now he is able to eat most everything we eat, but I still have to grind it up. The kid doesn't have even ONE tooth yet! Although, he does a great job chewing with his gums. 🙂
Around 9 months of age, I started feeding Judah egg yolk omelets. Quite honestly, they should really be called Scrambled Egg Yolks, as I could never keep the omelet shape in tact. Egg yolks can be given to babies at this time, but keep the egg whites away for now. This was no problem for me, since making an egg yolk omelet for Judah just meant an egg white omelet for mommy! Yum!
Typically, I add avocado and cheese to his (and mine!) omelets, but you can add what you want. Maybe even sneak in that particular veggie your baby doesn't like and see how he reacts. <wink, wink!> I love having egg yolk omelets as an option since I always have eggs on hand and at least some kind of veggies or cheese to throw in.
Egg Yolk Omelet
Serves: 1 Baby and 1 Mommy 🙂
2 eggs
½ cup milk, divided
½ cup shredded cheese, divided
half of a ripened avocado (half diced, half sliced)
salt, to taste
pepper, to taste
2 tablespoon olive oil, divided
In two small bowls, separate the egg yolks from the egg whites. Set aside the whites.
Pour ¼ cup of the milk into the bowl with the egg yolks. Use a whisk to beat together. Stir in half the cheese and ¼ of the diced avocado. Season to taste with salt and pepper. (Remember, this is for the baby, so season lightly.)
Heat 1 tablespoon of the oil in a small skillet. Pour the egg yolk mixture into the hot skillet all at once. Once the bottom of the omelet is cooked, flip. (This is where I also turn it into scrambled eggs, which is fine, as I never flip it successfully.) Continue to cook until the eggs yolks are cooked through. Let cool before serving to baby. Serve with avocado slices.
For the egg white omelet for mommy, repeat above steps with the bowl of egg whites and enjoy!
