It's the first weekend of the new year and I took into serious consideration what I want to bring to the blog for 2019. One of the first things I decided was to return my Saturday Seeds posts.
I've had much feedback in the past that you enjoy reading about our family happenings, and I've enjoyed looking back on these posts as a journal of what was going on in our life at the time. They brought back a lot of memories, many of which I would have never remembered if it wasn't for journaling it in Saturday Seeds.
So, for your sake and my own, I'm starting Saturday Seeds once again. I'm not promising a post every week, but I am going to try! Each post will include what was going on in our little Gladd family that week. I'll also link to recipes from the archives. If I have any fun and interesting discoveries I came across I'll share those with you, too!
GLADD FAMILY HAPPENINGS:
A quick journal of this week with the Gladd's (that's us)!
Christmas is officially over, although it's not quite official in my house yet. YES, I still have our decorations up and instead of typing this post I'm supposed to be packing up our tree ornaments and boxing everything Christmas. My goal was to have it all down today and put up our football decorations for the start of NFL playoff season. (Go Bears!) I have about one hour to accomplish that goal. #nothappening #itsokay
For Christmas, my in-law's bought us this LEGO set. We started working on it as a family two days ago and I am loving it. The LEGO Creator Expert Modular sets are some of our favorites. In addition to this diner set, we previously built the Parisian Restaurant, Palace Cinema, and Pet Shop. If the price tag wasn't so high (because of it's rare availability) I would love to own this one next.
Speaking of LEGO, this morning we ventured to downtown Jackson to explore the "Keep Building Jackson" display that is a miniature model of the city of Jackson built in all LEGO blocks and minifigures. A retired psychologist, Dr. Scott Crawford (pictured above), is the artist and uses his hobby as a way to cope with his debilitating condition caused from Multiple Sclerosis (MS).
It is an incredible display Dr. Crawford's been working on for 9 years! Our kids enjoyed the minifigure scavenger hunt provided, and we all loved taking our time walking around the model soaking in all the details. If you're a local reader, I highly suggest checking out this exhibit before he packs it up next week. If you missed it, no worries! He returns every year from December to January.
We leave one week from today for DISNEY WORLD! It's possible I have been going a little overboard shopping for Disney themed t-shirts and other fun little items. We are staying for six days at the parks. My parents will be with us for three of those days. We're staying the first four nights at Animal Kingdom resort then the last two nights at Wilderness Lodge. I have never been to either of them so I'm very excited to explore! Do you have any tips for these resorts? Anything we MUST see or do?
Because of our upcoming Disney trip, we've been pumping the boys with Disney movies during the Christmas break. They do not return to school until Monday, so we've have a lot of movie watching time (especially with our very rainy weather lately). They saw the original Mary Poppins finally for the first time! We also watched Ralph Breaks the Internet at the theater this week. Have you seen it? I thought it was cute! What did you think?
RECIPES DUG FROM THE ARCHIVES:
Let’s dig into the archives and reconsider some of the older recipes my family enjoyed during the week.
White Cheese Dip - It's the time of year again when we want all the yummy football food. This recipe for Queso Blanco is one of my most popular posts and is the BEST copycat of your favorite Mexican White Cheese Dip.
Southern Chicken 'n Dumplings - Since it's still winter and we're experiencing cold weather even here in Mississippi, why not make the most of it and warm up with this delicious Chicken 'n Dumplings? It's a recipe from a Mississippi grandmother, so it's as authentic as it gets!
LEGO Room - Ok, this is not a recipe, but since we talked a lot about LEGO in this post I thought I'd remind you of our LEGO room and the DIY steps for creating your own LEGO desk.
Have a great weekend, everyone! Although we'll be leaving at 4AM next Saturday for our road trip to the most magical place on Earth, I do hope to have another Saturday Seeds post for you then!
