Our weather is SO beautiful right now! In Mississippi, you need to take advantage of the very few fall temperature days. It's cooled off (meaning it's in the 70's and low 80's rather than the 90's) with mild humidity and an abundance of sunshine.
Last year when this cooler weather arrived I got all crafty, and this year I'm feeling it again. I think I might finally decorate our front porch for the fall season. I saw the local landscape store finally has some hay bales for sale, which is what I've been waiting for! I have no idea how much they are charging for them. What is a good price for hay bales? I think I want about three of them next to my front door to hold a few pumpkins and maybe a scarecrow.
I should probably hit up Pinterest for some more inspiration. Is your front porch decorated? I'd love to hear ideas!
This cooler weather also gets me in the mood for sitting at a fire pit and roasting marshmallows while hanging out with friends. We do not have a fire pit yet, so I've found other ways to get our S'mores fix, including these yummy S'mores cookie bars. I decided one day to bake graham cracker dough in a pan and add the usual S'mores fixins. It turned out marvelous, although, next time I will also add the mallow bits to the top of the cookies near the end of baking since they sort of melt and disappear into the dough when mixed in. I stuck a few into the photos so you know they're there. 🙂

S’mores Graham Cracker Cookie Bars
Ingredients
- 2 ½ cups plus 2 tablespoons unbleached all-purpose flour
- 1 cup dark brown sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 7 tablespoons unsalted butter , diced and very cold
- ⅓ cup honey
- 5 tablespoons milk
- 2 tablespoons vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup Jet Puffed Vanilla Mallow Bits
Instructions
- Adjust oven rack to the center position. Preheat oven to 350 degrees F. Lightly grease a 9-x13-inch pan with nonstick spray; set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, mix the flour, brown sugar, baking soda and salt. Add the butter and mix until the mixture resembles coarse meal. (Alternatively, you can use a food processor instead.)
- In a separate small bowl, whisk together the honey, milk and vanilla. Add to the dry mixture and mix until a dough forms. Gently stir in the chocolate chips and ½ cup of the Mallow Bits.
- Press the dough into the prepared pan and bake for 25 minutes. Remove pan from the oven and immediately sprinkle the remaining ½ cup Mallow Bits evenly over the top. Use your hand to gently press them in so they stick. Let cool completely before slicing into bars.
