These jack-o'-lantern fruit cups are a healthy fun snack for Halloween!
When I saw this recipe in a magazine at my mom's house, I knew it would be perfect for our annual pumpkin carving party. Since I already had a few desserts planned, I needed something healthier - like fruit! These were fun and easy to carve. But, I think it was even more fun to hear everyone's reaction to them at the party! It was a nice addition to the spread of food, and each one was a perfect single portion.
You can hollow out and carve the oranges a day ahead of time, as long as you keep them refrigerated. Do not fill them with the fruit salad until shortly before serving (up to 2 hours before).
You must admit, these are really cute, right?

Snack-o'-Lantern Fruit Cups
Ingredients
- oranges
- cut up fruit
Instructions
- Slice top off the navel orange. Run a knife around its interior to hollow it out.
- Scoop out the orange segments and reserve for filling. Carve pumpkin face on one side of the orange. Repeat for other oranges.
- Use a paper towel to gently soak up any remaining juice inside the oranges. Dice up desired fruit, including the reserved orange segments and fill each cup. Set the lid back on top and serve.

How do you keep the orange peel from drying out if you are preparing this snack ahead of time? I LOOOOOOOVE the idea though, it is so cute!

this is an awesome idea! i'm making these for a friend's pumpkin carving party that is tomorrow night.
i bought a few pink grapefruits to experiment in addition to navel and valencia oranges. the grapefruits have thicker skins, therefore retaining their shape better once hollowed out. they are also larger and can hold more fruit. when working with oranges, its easier to accidentally take away too much of the side, causing the orange to lose its structure. however, from an aesthetic consideration, the skin of oranges tends to have richer color and nicer gradients 🙂
