These Cannoli Ice Cream Sandwiches are a special dessert that really doesn't take much to prepare. Cannoli ice cream is sandwiched between two pizzelle cookies, and the ice cream is made without an ice cream maker!
It's the last day of National Ice Cream Month, but I'm guessing that's not going to stop you from eating ice cream for the rest of the summer, right? Heck, not even for the rest of the year! Ice cream is not a seasonal treat in our house, as I'm sure it's not in yours either!
But, being that it IS the last day of the celebratory month, I figured I'd end it with this Cannoli Ice Cream Sandwich. One of Ben's favorite desserts is an ice cream cookie sandwich. Typically, he will go for vanilla ice cream sandwiched between two chocolate chip cookies. Let me tell you that he was over the moon with this version! He requested the Cannoli Ice Cream Sandwich again the next two evenings, one of which I had to disappoint him since we ran out of pizzelle cookies.
If you do not have a pizzelle iron to make them homemade, never fear! You can buy pizzelle at some stores...even your regular grocery stores will sometimes carry them. I've found them at Walmart and Kroger before, but can't remember if it was during special holidays or year round.
The combination of the crunchy pizzelle cookies with the sweet cannoli ice cream is outstanding. Try sprinkling a little dust of powdered sugar on top, and you really have a treat!

Cannoli Ice Cream Sandwiches
Ingredients
- ¾ pint Cannoli Ice Cream , softened (recipe here)
- 8 Pizzelle cookies (store-bought or recipe here)
Instructions
- Line a 7x11 baking pan with parchment paper. Spread the softened ice cream into an even layer in the pan. Top with another layer of parchment paper and freeze for at least 4 hours.
- When ready to serve the ice cream sandwiches, find a cookie cutter, drinking glass or bowl that is the size of your pizzelle cookies. Remove the ice cream from the freezer and use the cutter, drinking glass or bowl to cut out four circles of ice cream. Place each ice cream round on a pizzelle cookie, then top with another pizzelle cookie. Serve immediately.
